Distilled at the Cooley Distillery (home to brands like Connemara, Tullamore Dew and Tyrconnell, amongst others), while the aromas need plenty of coaxing to blow off the alcohol, this offers a delicious, mouth-coating arrangement of ripe pears and apples, beeswax and vanilla bean punctuated by bittersweet wood spices, semi-ripe pineapple and hints of banana cake in a prolonged finish.
