Jennifer Nickerson, Stuart Nickerson and Liam Ahearn founded Tipperary Boutique Distillery Limited in 2014. They’ve spent the past few years releasing independently bottled malts, however, their Ballindoney Farm distillery is now operational, and debuted its own release in November 2020. There’s full transparency on the label – in this case, the grain was harvested from a single field of Olympus barley sown in 2016.
